La Madre (Mother) who has engendered us all – she deserves our praise and this contemporary youthful, refreshing vermouth. La Madre is made from 32 botanicals, with 22 being native to the region. Maceration takes place in clay amphorae to make the essence, or La Madre (Mother), the base for the vermouth. La Madre is aged for a few months in barrels. To make the vermouth, the essence is blended with carefully selected wines from the region, White Grenache and Macabeo.
This Spanish Vermouth is macerated with green apples in addition to the botanicals.
It is vibrant and full of sweet fragrances where it emphasizes an intense aroma of green apple. It is fresh, clean and subtly herbaceous with notes of licorice, citrus and a sharp sweetness. A mildly bitter finish, but with enough herbal depth to remain complex and interesting. The post taste is predominately of apple smoothly mixed with bitter roots and tree bark.
