“Puntagave Rustico controlled denominations are a departure from the “business as usual” tequila concept because it delivers “complexity of character.” It does it by featuring a variety of appellations highlighting agave flavors. These esoteric spirits are from different altitudes and micro-climates throughout Mexico and just like wine, these agave distillates are a result of weather and terroir. What does this mean? What it means is that PUNTAGAVE will demonstrate by different taste profiles and aromas that “terroir” exist in agave, the same way the wine industry has demonstrated it exist in grapes.
The most unique characteristic about PUNTAGAVE RUSTICO is that it delivers “complexity of character” rather than the “consistency of characters” possess by PUNTAGAVE ARTISANAL. Every controlled denomination of PUNTAGAVE RUSTICO is a unique product of an specific origin, micro-climate, time, and method of production. it’s truly special, “It shifts, it moves, it’s a profound and unique experience. when tasted side by side, “priceless”.
Raicilla distilleries are called Tabernas. Raicilla and Bacanora are our in-house favorites. We consider both the most fragant and fruity.
Produced for over 400 years in the coast and mountains of Jalisco, Raicilla is an Agave Spirit that in the 1780’s in order to avoid a tax levied by the Spanish Crown it became an illegal moonshine mainly dealt in the back streets of Puerto Vallarta. The potent brother of tequila yields drunken stories by tourists from all over the world. Jalisco offers a plethora of agave species, second only to Oaxaca. These, along with great diversity in terroir, equipment, and techniques, gives Raicilla an amazing spectrum of flavor and history.
Our Raicilla come from two different tabernas: One is produced in the coastal region of Cabo Corrientes, 700 meters above sea level. The agave is roasted in an earthen pit, distilled two times in a Philippino still made from copper and a hollowed-out tree trunk, produced with Rhodacantha and Maximiliana types of Agave. This particular coastal terroir & agave rhodacantha transforms on the nose to a lacteous aroma like parmesan cheese with a profound green earthy touch thoughout.
Our other profile is produced in a Taberna in the Mountains of Jalisco. this profile highlights the floral characteristics of the Maximiliana agave, commonly known as Lechuguilla. From the root or the “piña” of the Lechuguilla surface a bouquet of light citrus and floral aromas that are joined by notes of hibiscus, beach plum and pineapple.
PUNTAGAVE Raicilla strong acidity and distilled at a high 88 proof provides a big-bang profile that can be enjoyed straight-up “ay caramba” or it can also be used to create amazing cocktails.”
